shrimp Fra diavolo with linguine





Ingredients:

1-pound tiger prawns
1 tsp red pepper flakes
6 tablespoons olive oil
1/4 cup cognac
12 garlic cloves
1/2 tsp sugar
3 14 oz cans diced tomatoes
1 cup white wine
1/4 cup parsley 
1 lb linguine

Instructions:

Toss shrimp in 2 tblspn of oil 3/4 tsp salt and 1/2 tsp of red pepper flakes

Cook 30-45 sec no stir in pan.  Off heat flip and put in cognac and light.  Transfer to bowl and cover

Add 3 tbs oil and most of the garlic.  Cool for 7-10 min add 3/4 tsp salt and 1/2 tsp of red pepper flakes, sugar and tomatoes, and wine.  Cool until ready

Add in parsley, 1 tbsp oil, remaining garlic, and tiger prawns with sauce

Drain water from noodles but reserve 1 cup. If pasta water.  Cost noodles with some sauce and pasta water and serve

Chemical changes:

1. when the shrimp is first put on the pan to get a nice sear on each side this would get at that the browning process would be a form of physical and chemical change. 

2. when the shrimp is lit on first there is a combination of all the flavors being put together meaning that it would change the chemical balance of the sauce that also has shrimp in there.

3. The linguine will change in a chemical sense, meaning that it will react with the salt added to the water, creating a lot of foam and bubbles.
